Ingredients

watermelon
¼
cup
pistachios
¼
cup
feta cheese

Tbsp
fresh basil
1
Tbsp
fresh mint
1
Tbsp
chopped scallions
Zest from ½ lemon
Salt and pepper, to taste
Olive oil, to taste
Instructions
Slice the watermelon into thin strips.
Chop the pistachios, feta cheese, fresh basil, fresh mint, lemon zest, scallions, salt, and pepper.
Add each ingredient one at a time into a bowl and chop until it creates a nice crumble.
Arrange the watermelon on a plate, overlapping each piece.
Top with crumble, then drizzle with olive oil and add fresh black pepper.
