Crispy Roasted Blackened Cauliflower with Herbs

Ingredients
- 1 large head of cauliflower, cut into florets (about 8 cups)
- 1 cup mixed herbs (basil, dill, and cilantro), chopped
- 1 lemon, cut into wedges
- 1 clove garlic, grated
- 2 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- ¼ tsp cayenne pepper
- Salt and pepper, to taste
- Zero-calorie nonstick cooking spray
Instructions

Preheat oven to 425°F.

Spray a baking sheet with zero-calorie nonstick cooking spray. Combine the cauliflower and seasoning in a large bowl. Transfer to the baking sheet and roast for 15 minutes, or until tender.

Toss the cauliflower and add the lemon wedges. Roast for another 15 minutes, until slightly blackened.
