Sheet Pan Chicken Fajitas – RM3®

Ingredients
- 1 lb. boneless chicken breast
- 2 bell peppers
- 1 medium red onion
- ¼ cup green onions, chopped
- 2 Tbsp lime juice
- Salt-free taco seasoning, to taste
- Minced garlic, to taste
- Zero-calorie nonstick cooking spray
Instructions

Slice the vegetables and mince the garlic. Combine with the lime juice and 2 Tbsp of taco seasoning in a large mixing bowl.

Preheat the oven to 400°F.

Season the chicken breast on both sides with the remaining taco seasoning.

Heat a large cast-iron skillet over medium-high heat and coat it with zero-calorie nonstick cooking spray.

Sear the chicken on both sides until golden brown (the chicken will not be fully cooked).

Transfer the seared chicken to the sheet pan with the vegetables.

Bake in the preheated oven for 15 minutes or until the chicken is fully cooked and the vegetables are tender.
