Ingredients
- 16 oz. lean ground beef
- 1 bag of frozen cauliflower rice (1 ½ cups)
- 1 ½ cups tomatoes, diced
- 2 tsp Italian seasoning
- 1 tsp garlic, minced
- Salt and pepper, to taste
- Fresh basil or parsley, for garnish
- Zero-calorie nonstick cooking spray
Instructions

Spray a skillet with zero-calorie nonstick cooking spray. Add the ground beef and crumble it as it cooks.

Add the tomatoes, garlic, Italian seasoning, and salt and pepper to taste. Stir and cook covered for 5 minutes.

Prepare the cauliflower rice based on the package instructions.

Place the cauliflower rice on the plate and top with the beef mixture. Sprinkle with fresh basil or parsley.
