Watermelon Carpaccio Summer Salad

 

Watermelon Carpaccio Salad – GLP Elite™

Cook Time 15 minutes

Course Lunch, Side Dish

Servings 8 people

Ingredients

  

  • 1 watermelon
  • ¼ cup pistachios
  • ¼ cup feta cheese
  • 2 Tbsp fresh basil
  • 1 Tbsp fresh mint
  • 1 Tbsp chopped scallions
  • Zest from ½ lemon
  • Salt and pepper, to taste
  • Olive oil, to taste

Instructions

 

  • Slice the watermelon into thin strips.
  • Chop the pistachios, feta cheese, fresh basil, fresh mint, lemon zest, scallions, salt, and pepper.
  • Add each ingredient one at a time into a bowl and chop until it creates a nice crumble.
  • Arrange the watermelon on a plate, overlapping each piece.
  • Top with crumble, then drizzle with olive oil and add fresh black pepper.
