Chocolate-Mint Mousse
Ingredients:
- 1 serving Thick & Rich Chocolate Protein Shake*
- ½ cup of water
- 1 tsp gelatin
- 1 Tbsp Swerve® Confectioner’s Sugar Substitute (or more to taste)
- ½ tsp sugar-free mint flavoring
Directions:
- In a medium saucepan over medium heat, bring water to a boil.
- Whisk in the gelatin until dissolved and then remove from heat. Let cool for 15 minutes.
- Prepare the Thick & Rich Chocolate Protein Shake, but only use between 4-6 oz of water. Allow to sit.
- Scoop the thick foam from the prepared shake mixture and put into large bowl. Beat this with sweetener and your choice of sugar-free mint flavoring.
- Beat mixture on low until combined. Spoon or pour into 4 small dessert cups and refrigerate until firm (for about one hour).
- Garnish with fresh mint & enjoy.
