They’re called miracle noodles! Zero carbs, zero calories, and good for you. Now, that’s a recipe for success.
Hi, I’m Jan D’Atri and this is clean eating the Red Mountain Way!
They’re so versatile. You can turn miracle noodles into an Asian bowl ,an Italian dish, a protein meal, or whatever you can dream up. And, they’re perfect for a weight loss program because they’re calorie, carb, and gluten-free. 97% water and the rest is fiber, which lets you feel full for a long time. Plus, they’re keto and paleo friendly. You’ll find a variety of miracle noodles and they all take on the flavors that you add to them. So, let’s build some healthy miracle noodle meals.
I’m using angel hair spinach and fettuccine. The first thing to do is to drain the liquid from the package and then rinse the noodles under cool water for about a minute. Now, miracle noodles are also known as shirataki noodles — made from the ancient konjac yam. And for people with diabetes, miracle noodles are wilt miraculous for stabilizing blood sugar levels, because they control the release of glucose which can prevent spikes.
Now, an easy way for how to cook miracle noodles is to add a little water to a pan and bring it to a boil. Add the noodles and cook them until the water evaporates. You’ll see the noodles go from clear to opaque. And now, you’re ready to turn them into a meal.
These fettuccine miracle noodles are perfect for an Italian-inspired dish with pasta sauce, cherry tomatoes, and fresh basil. Some grilled shrimp adds delicious protein.
For an Asian dish, tried the angel hair miracle noodles and add your favorite stir-fry vegetables with a small amount of zero-calorie Asian dressing. The result is spectacular, beautiful, healthful, and hearty!
But here’s a Red Mountain Weight Loss footnote about this dish that may surprise you: even though veggies are great for a healthy diet, not all veggies will help you lose weight. For instance, carrots have a high glycemic index and convert quickly to sugar, causing an instant spike in insulin. When insulin levels are high, it triggers your body to store fat. So, for maximum fat-burning, leave the carrots out!
Miracle noodles are also great with a pesto sauce. And for that, you’ll need a half a cup of packed fresh parsley, 2 cups of packed fresh basil, a pint of cherry or grape tomatoes, teaspoon of salt, 1/2 a teaspoon of pepper, and a spice with surprising health benefits – now, adding spices like red pepper flakes has been known to boost metabolism, reduce hunger, lower blood sugar, and so much more. You’ll add 1/4 of a teaspoon to the mix, and then a tablespoon of lemon juice (which is loaded with vitamin c and also helps boost your immune system), and one clove of garlic — a real superfood.
Blend it all up and have your noodles ready. I’m cooking the spinach miracle noodles for this dish. Delicious with that bright, tasty pesto sauce! And, if you want to add some protein, a grilled chicken breast or fresh shrimp are great additions.
Whether it’s Asian, Italian, or everyday American cuisine, there’s no limit to what you can do with miracle noodles!
